THE ROUND UP:2014

Hi,
So i have been doing this for a year now.That seems absolutely ridiculous to me,i cannot believe it has been that long since i decided to write how i feel and release it to the world.

I had two resolutions this year,one was to blog every week ...hum...hum.So maybe that lacked a bit but for most of the year and did quite good.I feel i wrote posts that made people think and spread awareness over certain issues and i personally am very proud of myself.

My second resolution was to take a photo every day of myself and see how i change because i don't think my looks change very much.I have done except for i realized somehow i missed the 20th june but oh well,i basically did it nearly.I am happy to report i literally have not changed at all this year,looks wise,


One thing i am the most happy about this year is that i have come out of my shell a bit more,have stuck up for myself and have become more confident in myself.There is still a long way to go with these but i am getting there.

TEA CUPCAKES

Hi,

So the other day i really wanted to make some tea flavored cupcakes because i haven't baked in ages but doctor who was on soon and i was sort of rushing at the end and they turned out looking a bit amiture but i could of made them look a lot better with a bit more time.So i'm sure you would too.

Anyway on with the recipe because they tasted great...

Ingredients:

  • 235g Butter
  • 235g Brown sugar
  • 235g Self raising flour
  • 3 Eggs
  • 1Tsp Vanilla extract
  • 3 Tea Bags
  • 5 tbsp Milk
  • 1tsp baking powder




Equipment:

  • Big bowl
  • 2 Big spoons
  • Measuring spoons
  • Measuring scales
  • Electric whisk
  • Saucepan
  • Spatula
Method:
  1. Heat the milk and tea bags together gently until the milk has slightly changed colour.
  2. Next cream the sugar and margarine together until pale and fluffy.

  3. Then,add the eggs a little at a time and whisk between adding each bit.If it starts to split add a little of your measured flour.

  4. Once all the egg is added add the flour and baking powder and fold through with the spatula in a figure 8.
  5. Next add 3tbsp of the infused milk and mix.
  6. Next evenly distribute between the chosen cases and bake for 15 minutes in a oven at gas mark 5.


  7. When out of the oven leave to cool for 15 minutes.
  8. While they cool make icing by adding the remaining milk to 100g of icing sugar.
  9. Finally add the icing to the cupcakes and add any toppings you like.

So as you can see i rushed at the end but up until then they looked nice and in the end they tasted so nice.

EASTER HUNT COOKIES

Hi,
So Easter is just around the corner and i wanted to make something special for the occasion.But i didn't want to be predictable with the traditional chocolate egg or bunny or hot cross buns etc.


So i went for Easter hunt cookies.


Ingrediants

Equipment


Sugar cookie dough:
Ingredients:
245g Plain flour
1/4 tsp salt
114g Butter
100g granulated sugar
1 large egg
1 tsp vanilla
1 whole lemon

Method:

  1. Cream the sugar and butter together until fluffy.
  2. Then add the lemon zest,egg and vanilla extract and whisk.





  3. Then add the flour and salt and mix until a dough is formed.
  4. Then place dough in clingfilm then into the fridge for 1 hour or overnight.
  5. Once out of the fridge,take your dough and leave to rest for 5 minutes.Flour your surface and roll out the dough to about 1/4 inch.Turning ever so often to avoid sticking.
  6. Cut out shapes that are anything you would like and place on a slightly greased baking sheet.
  7. Then place whole tray in fridge or freezer for 5 minutes.Then place in a oven at gas mark 6/180 fan/200 electric for 8 -10 minutes or until slightly browned.

  8. Leave to completely cool.And repeat with any left over dough until all used.
Now you can choose to eat like this or carry on and make the icing.

Ingredients:
  • 1 egg white
  • 1 tsp lemon juice
  • 165g icing sugar
Method:
  1. Mix the egg white and lemon juice together.
  2. Add icing sugar a little at a time until an icing of the correct consistency is formed,it should be spreadable.
  3. Once made separate into bowls depending on how many different colours you want and dye with food colouring, i used gel food colour as you can control it more.
  4. Now place a little mixture in a piping bag and pipe outlines on all cookies and leave to set.Then flood the cookies with colour and leave to set.

  5. Then get some icing pens and draw some little details on.
Obviously i need some practice but i am very happy with how these have turned ot and it was the first time i have ever made these.

VALENTINES CAKE POPS!!

Hi,


So its valentines day soon and i thought hummm what can i make that isnt too soppy and urgghhh.So i thought what i could make is heart shaped cake pops(and normal ones).They can be given to your boyfriend or girlfriend or a friend or you could eat them yourself.Who cares they are so yummy!


Ingredients:

  • Cake
  • 300g Butter cream
  • 400g white chocolate
  • Sprinkles
Equipment:
  • Bowl
  • Heatproof mug
  • Heart mould(optional)
  • long sticks
  • spatula
Step 1:
Get your favorite butter based cake ,if you would like one CLICK HERE,but remember you can use any cake you would like.

Step 2:
After baked and cooled,tear the cake to pieces and add your buttercream CLICK HERE and mix.

Step 3:
Roll round balls or roll out two oblong shapes with your hand and squeeze together to form a heart shape.Or use a mould like this one




Step 4:
Dip the end of your stick in the melted chocolate and insert half way into your heart and dip into the chocolate until it covers the whole thing and quickly pour sprinkles over it.And leave to set stood up.


Step 5:
Find a creative way to serve ,i choose a jar and tissue paper.
